The Du cœur au ventre encounters are intimate exchanges with the personalities transforming Quebec's culinary identity. Accompanied by culinary communicator Allison Van Rassel, the audience will experience a privileged moment allowing them to taste a few bites, listen to, and understand those who are (re)defining our gastronomic culture. A human exchange from which one leaves nourished with ideas, flavors, and inspirations. A face-to-face with artisans of change, who have more than just heart in their belly. For this meeting, Allison Van Rassel meets Colombe St-Pierre, arguably the most committed chef in Quebec. Her name has become synonymous with cuisine that takes a stand. For her, feeding people is an act of love for a territory. Since 2003, she has nourished Quebec as much as she has defended it. Today, she is taking time to breathe and reflect on what's next. It is an honor to welcome her to the next Du Cœur au ventre encounter.
